Hi Greg. I found your vidio interesting and entertaining.Like the cigar view. I agree slow cooking is best but I do like to try differnt sauces and sometimes I speed things up to two hr cooking times for unexpected company.Keep up the good work.

"Red & processed meats cause bowel cancer, explained Amanda Cross, an epidemiologist at the National Cancer Institute (NCI). "This is the largest study to look at the effect of red and processed meat on multiple cancer sites, such as bowel/colon, laryngeal and liver cancer."
Red meats included beef, pork and lamb. Processed meats included bacon, red-meat sausage, poultry sausage, luncheon meats, cold cuts, ham, hot dogs and low-fat hot dogs

You are wrong about Bar B queing. Smoking is not bar-bcueing. True Bar-b-que does involve fire directly.

Ok 200 degrees at 6 hours does yield fall off the bone ribs. But the points solomon did not point out. Rib meat selection. Personally I go with pork based babyback ribs. I avoid beef ribs. I also go with a honey based barbaque sauce and bast the ribs every hour on the hour in fresh sauce. But then I am wrapping them in tin foil and doing this in the oven. But the results are the same. GOOD RIBS...
