i agree. grind your own black pepper, more cayenne and sea salt. the iodine gives a flavor to the salt that just isnt tastey. hes also missing a couple spices and herbs. namely file. others are my secret.

I'm from Gonzales, Louisiana home of the Jambalaya Festival. I have been cooking Jambalaya since I was about 10 years old. I have never seasoned, or seen anyone season a Jambalaya like this! And you should use a black iron pot better taste and flavor.
