Pit boys you did well until you stuck your unwashed fingers into the salt. Cross contamination can be deadly. Keep some wet wipes handy or a spoon so you don't take you hand straight from the raw poultry to the salt.

We have some nice barbecue also..we call it "churrasco", but likewise you guys, we don't use sauces to season the meat, mostly unrefined salt and what we call "salmora" wich is basicly salted water with a couple of chopped garlic and onion slices, pouring the liquid over the meat. The most traditional families do it like in the fathertimes. Meat is stuck in long metal sticks (the old ones did use swords) and set it around a bonfire.
